Usually,  you see wild turkey tails growing sessile (stalk-less) off a vertical surface.  This is preferable because they can produce fruiting bodies sooner.  I found that unless the vertical surface area was limited on the block, the caps will not form on the top (although this have more to do with faster moisture loss.)
